Keep prawns on ice and cook within 1–2 days. Shell-on keeps better than peeled. Freeze at −18 °C for up to 3 months; thaw in the fridge, never on the counter.

Then it is packed. On ice, in a sealed EPS cooler that holds cold for up to 72 hours. Mombasa goes the same day by rider; everywhere else travels by express courier or bus.

It is a size grade — S1 is larger than S2 and smaller than tiger. Roughly 30–40 prawns to a kilo.
