Keeps: 1 day refrigerated
Traceable to the source
04:30 The small boats leave Shimoni
11:00 The catch lands and we buy it the same day, direct from the fisherman

→ Mombasa same-day by rider; other counties by express transport, cooler sealed
Raw shellfish always carries some risk. Ours are gathered and iced fresh, but anyone pregnant, immunocompromised, elderly or very young should eat oysters cooked rather than raw.
How many per person?
Six to twelve as a starter.
How do I know one is bad?
Discard any that is already open and does not close when tapped, or that smells of anything but clean sea.
