How to cook it
Fry it whole. Score the sides three times, salt, lime, and let the skin go properly crisp — that is where this fish is at its best. It also takes charcoal well. Gut it the moment it reaches you: mullet spoils from the inside faster than most, and quick gutting is the difference between a clean fish and a strong one.

Questions
Is mkizi the same as red mullet?
No — they are not even related. Red mullet is a goatfish. Mkizi is a true mullet, family Mugilidae. Different fish, different flavour, different price.
Does mullet taste muddy?
It can, and we will not pretend otherwise — mullet feeds off the bottom and tastes of the water it lived in. Fish from clean inshore water is firm and clean-tasting. That is why we care where it comes from, and why we gut it straight away. If one ever reaches you tasting of mud, send a photograph and we will replace it.
