Nutrition & health

~110 kcal · 23 g protein · 2 g fat · rich in protein, niacin and selenium

Very high protein, very low fat — a big-game fish with lean, steak-like flesh.

Nutritional values are approximate, per 100 g raw edible portion, and vary with size and season. This is general information, not medical or dietary advice.

How to cook it

Treat it like tuna. Thick steaks, seared hot and fast or grilled over charcoal, served on the rare side of done. It dries out quickly if overcooked.

Grilling Raw / sashimi

Goes well with: Lime, black pepper, charred onion

Questions

Is sailfish like tuna?

Similar texture and steak cut, slightly paler and leaner. Cook it the same way and do not overdo it.

Can it be eaten raw?

We do not recommend it for billfish. Cook sailfish through or to medium at least.
