How to cook it

Cut him into thick steaks and put him over charcoal — the flesh is dense and will not fall through the grate. He fries well too, and he holds his shape in a curry where a softer fish would dissolve. Salt him twenty minutes before he meets the heat, and take him off the moment the flesh turns from clear to white.

Then it is packed. On ice, in a sealed EPS cooler that holds cold for up to 72 hours. Mombasa goes the same day by rider; everywhere else travels by express courier or bus.

Is tengesi bony?

One straight backbone and very little else. He is among the easier fish to eat and to fillet, which suits anyone who dislikes picking through bones.

Good for grilling?

He is built for it. Firm, lean, and he keeps his shape over fire. Take him in steaks rather than whole for the grate.
