How to cook it

The rule is fast or slow, never in between. Either simmer 45–60 minutes until a knife slides in easily, or char it hot for 3–4 minutes. Anything between makes it rubbery. Coastal cooks tenderise by beating it or freezing it first — freezing breaks the fibres and genuinely works.

Why does my octopus come out rubbery?

You cooked it in the middle range. Under 10 minutes or over 45 — nothing between.

Does freezing help?

Yes. Ice crystals break down the muscle fibres. A frozen-then-thawed octopus is genuinely more tender than a fresh one.

Do you clean it?

Yes — cleaned and ready to cook unless you ask otherwise.
