How to cook it
The rule is fast or slow, never in between. Either simmer 45–60 minutes until a knife slides in easily, or char it hot for 3–4 minutes. Anything between makes it rubbery. Coastal cooks tenderise by beating it or freezing it first — freezing breaks the fibres and genuinely works.
